Leading Sustainable Restaurant, BOCA (www.boca.ae) seeks the following vacancies for its location in Dubai, UAE:

  1. Executive Chef / Head Chef
  2. Tapas Chef / Chef de Cuisine
  3. Restaurant Operations Manager

Tucked away in the heart of Dubai's financial district, BOCA is a Modern European restaurant influenced by Spanish cuisine and with a strong commitment to sustainability and local sourcing.

In addition to sourcing ingredients locally and supporting local farmers and fishermen, BOCA has stepped up efforts to reduce waste with the help of its own Waste Officer. The restaurant continually audits kitchen and bar operations, refuses single use plastic from suppliers and to customers, operates a demand-driven inventory, and prefers working with like-minded partners across the value chain. In its location in DIFC, Dubai, BOCA runs on 100% renewable energy and has just published its first carbon emissions report detailing its impact on the environment.

BOCA is Gault Millau UAE 2022 Sustainable Kitchen of the Year, and listed on the 50 Best Discovery list for Dubai, UAE. BOCA's wine list is recipient of The World of Fine Wine 2021 Middle East And Africa, Best Short Wine List and Star Wine List Award 2022, and Wine Spectator Award 2022.

BOCA is currently seeking multiple senior positions:

  1. Head chef or an executive chef to lead our kitchen, our sustainability practices, work with local and native ingredients and assist in leading expansion in the region.
  2. Tapas chef or chef de cuisine leading our Spanish kitchen and assist in expanding in the region.
  3. Restaurant Operations Manager to lead our entire restaurant operations in front of house and back of house.

The right candidate will have spent some time in a modern fine dining restaurant or similar, leading or supervising a team of hospitality professionals and chefs.

The candidate will need to be curious about sustainability including local sourcing, unearthing native ingredients from the desert, proactive waste management, and carbon emissions.

REQUIREMENT

  • Minimum degree: Higher / Intermediate Training Cycle
  • Experience: Minimum of 5 years
  • Professional category: Employee

CANDIDATE PROFILE

  • Strong culinary background in a 50 Best / Michelin / G&M / 5* Hotel or similar establishment.
  • For Chefs: producing modern cuisine in execution, taste, flavors, and presentation. Strong food cost, recipe creation, calculation, and inventory management.
  • Passionate and curious about sustainability, local and native ingredients, and waste reduction.
  • Understanding of environmental conservation and how sustainability is important in the food system.
  • Ability to lead and mentor a team.
  • Professional appearance and demeanor.
  • Excellent customer service skills.
  • Have interpersonal skills to deal effectively with all business contacts.
  • English is essential (spoken & written.) Proficiency in Spanish, French or Italian is a plus.
